SIZZLED SHRIMP AND GARLIC

This recipe is perfect for a quick dinner fix during the week or a nice weekend dinner with friends. The shrimp needs to be marinated which turns into the perfect excuse to make more delicious and nutritious side dishes. Seafood is very beneficial for people with diabetes as it’s an excellent source of protein and has omega 3 fatty acids that help with cardiovascular health.

 

Ingredients:

Marinade & shrimp

2 Tbsp. lemon juice

2 Tbsp. dry white wine

1 tsp. extra-virgin olive oil

2 cloves garlic, minced

½ pound medium shrimp, peeled and deveined shrimp

 

Sauce

1 tsp. extra-virgin olive oil

1 small bay leaf

1/4 tsp. crushed red pepper

1/4 tsp. salt, or to taste

1 tablespoons chopped fresh parsley

 

Directions

  • Combine lemon juice, wine, extra-virgin olive oil and garlic in a medium bowl. Add shrimp and toss to coat.
  • Cover and marinate in the refrigerator for 15 minutes, tossing occasionally. Drain well, reserving marinade.
  • Over medium-high heat, heat 1 tsp. extra-virgin olive oil. Once oil is hot, add shrimp and cook, until barely pink, turning once about 30 seconds per side. Transfer to a plate and reserve.
  • To the same pot and remaining oil, add bay leaf, crushed red pepper and the reserved marinade; simmer for 4 minutes.
  • Return the shrimp and any accumulated juices to the pan; heat through. Season with salt, sprinkle with parsley and serve immediately.
